🌿Use all room temperature ingredients, they are bond together very easily, which creates an evenly textured baked good. Cold ingredients do not emulsify together.

🌿 Cake flour produces the softest cake. If you don’t usually buy cake flour, make the exception here.

🌿Canned coconut milk is a cooking ingredient, not a beverage. It’s creamier and thicker than regular milk.Do not use the refrigerated coconut milk beverage that comes in a carton, because the two are very different.

🌿We recommend to use sweetened shredded coconut. It’s moister than unsweetened coconut and that makes a big difference in the cake’s texture.

🌿Always cool cake completely. Sounds obvious, but even the tiniest bit of warmth will melt the frosting, so be careful.

🌿The cake is best the day it is made, but leftovers will last lightly wrapped in plastic wrap in the refrigerator for up to 3 days.
